It’s been 602 days since Dan Petersen and That Burger took over the kitchen at Idle Hands Bar. In that time we’ve al eaten some tasty burgers paired with Iron Maiden, young adult novels, American Octoberfest Beers & even given them away for free for my birthday. We also helped Dan create, launch and sell his signature Bourbon Ketchup. It’s been a fun, tasty, burgerific ride … and now it’s over.

Description: What Fizzy Yellow Beer should be: full of life and flavor unlike domestic mass produced, mundane, lifeless, boring, bland, fizzy yellow, insipid swill that takes up space at pubs and restaurants.

Pairing: Making beer this tasty should be so easy.

Beer: Ballast Point Sculpin
Style: IPA
ABV: 7%
Description: Bright with aromas of apricot, peach, mango and lemon. Its lighter body also brings out the crispness of the hop.
Track:  “Nightrain”
Pairing: The Sculpin fish has poisonous spikes on its fins that can give a strong sting. Ironically, the meat from a Sculpin is considered some of the most tasty, much like this IPA.

Description: Ballast Point Wahoo Wheat Beer is created using flaked unmalted wheat, oats and malted barley comprise the grain, a special yeast, mild hopping, adding a blend of curacao (bitter orange), sweet orange and coriander to the boil and in this case, thai chili and lime.

Pairing: This is exactly what the other folks at Ballast Point said when the brewer said he wanted to make this beer.

Brad Farmerie’s “one-year” hiatus from college led to him moving to London and plunging head first into the culinary revolution taking place in the UK, earning his Grande Diplome from Le Cordon Bleu, gaining scars and kitchen experience in one, two, and three Michelin star restaurants, and seven years of near continuous travel.

Brad returned to the States to open the ever eclectic PUBLIC with design firm AvroKO in 2003 and followed this success with diverse projects like an Asian gin den Madam Geneva, the meat-centric Saxon + Parole, NY cocktail classic The Daily, and their first venture outside of NYC with The Thomas (Napa, California) just last year.

Farmerie has been named a “Rising Star” by Starchefs (2005), an “Emerging Tastemaker” from Food Arts magazine (2007), “winner” on TV show Iron Chef America (2009), “prince of porc” from whole hog connoisseurs Cochon 555 (2011), and “dad” by his children Bruno and Scarlet (ongoing).

Favorite style of Burger: Something closing in on ½ a pound, cooked medium rare although I’m also a fan of the flat fella on a slightly squishy Martins Potato bun.

Favorite Childhood Burger: My brothers and I rarely got to eat fast food when I was growing up so I think that made me love the experience even more. I’ve been told that I used to hold the McDonalds burger bun up to my cheek to feel the warmth before ripping into it. Funnily enough, I haven’t eaten a McDonald’s burger in over 15 years.

Burger that haunts your dreams at night: This will sound like shameless self promotion, but the burger that I’m mildly addicted to is the one that we serve at The Thomas in Napa, CA. It’s actually a pretty simple burger but it took us a few weeks to perfect the blend of 3 different cuts from 2 breeds of beef, aged 3 different ways to make a burger that is just downright delicious. It’s one that I think about more than I should and is always my first meal when I roll back into town. Damn good fries as well…

What is the one Burger you’ve always wanted to try but still have not: Louis’ Lunch. Have to taste the history sometime soon.

The secret to making a great Burger: Season it sucka! There are so many good burgers that become forgettable slabs of ground flesh because the cooks can’t/won’t season it properly.

Under no circumstances whatsoever, what should NEVER be put on a Burger: Full body weight. Most folks don’t really understand the proper dynamic of a smashed burger.

If you could eat any Mythical Creature which would it be: Probably a chupacabras for no particular reason.

If you could have a Burger with anyone alive, or dead, fictional or real, who would it be and where would you take them: I’d probably fill all of Corner Bistro with late 80’s early 90’s punk/alternative/unique music scene like Jon Spencer, the Beastie Boys, David Yow from The Jesus Lizard, Pavement, and Fugazi and drink a ton of beer and consume a load of burgers while talking shit and working the jukebox.

Name one Burger in LA that for once, people should get off a plane and go eat instead of In-N-Out: I have a spiritual burger advisor that I consult when traveling (George Motz) and he sent me to Apple Pan on my first trip to LA and I would pass that rec on to anyone looking for both feel and flavor.

THE CONQUEST
There are one billion different Burger restaurants in the world. That’s a true number based on actual information, but you can read more about by clicking the hyperlink. There’s massive fast Food chain conglomerates, local mom and pop shops, high end gourmet bistros, kiosks, drive-thrus, old school Hamburger stands, Food trucks, cafeterias, etc. Heck, you can even get a Cheeseburger on an airplane or from a man on a corner in shiny silver box. There’s a lot of Burgers in the Burgerverse and a lot of them come frozen or pre-cooked originating from massive slaughter houses churning out the lowest quality of Beef from animals pumped full of growth agents, living in inhumane quarters , all while you can get while still being USDA approved.

Now don’t get me wrong, I’m a sucker for almost any Burger and if you search this site you’ll see various forms of praise for some of those Burgers. But wouldn’t it be great if all the Burgers we ate were fresh, never frozen, sourced from farms who raise their cattle to live a comfortable life, slaughtered humanely and had never been pumped full of drugs without having to fork out NYC Steakhouse style bucks to eat it? Well folks, the dream is here. I’d call such a wonderful and delicious movement the “Burgerfication of the Nation” but somebody already owns the “®” on that!

Welcome to BurgerFi, a fresh-casual chain concept born in Florida. At BurgerFi, they live by the fresh, never frozen mantra and cook every single Patty to order without the use of microwaves, heat lamps or any form of re-heating. They serve only all-natural, grass-fed Beef that has no chemicals or additives. The cattle used to source the Beef come from Meyer Natural Angus and if you meet an executive of the company, they’re more than proud to pull out a book laden with stores, photos and information about each of the farms, their herd, their tenders and the conditions in which their raised. BurgerFi keeps the fresh menu to a simple state that allows them to focus their spending on better quality ingredients. Outside of Burgers, they also offer gourmet topped Hot Dogs, Fries, Onion Rings, Desserts, Craft Beer & Wine. The care to concept doesn’t stop there. Some of the materials used to build each location and it’s tables and chairs come from recycled plastics, compressed and recycled wood. They use recycling programs for much of their waste including oils, paper & plastic goods. I was invited to the opening of their first New York City store and my anticipation before walking through the door was already at what could’ve been an impossible to match level. Located on the Upper East Side, it’s unmistakable with it’s bright colors and inviting outdoor patio. You can’t help but notice it and after you read this, you won’t be able to stop yourself from eating there.

THE BURGER
Knowing this was going to be a monumental dining experience, I grabbed fellow food bloggers McKenzie from mmmguide.com and Sarah from fritosandfoiegras.com As we walked through the door, we were greeted by some of the executives, including COO Nick King, who were aglow with smiles and filled with warm welcomes. As we approached the counter and began to peruse the menu, the 3 of us took a step back realizing this wasn’t going to be an easy process. Everything sounded amazing! Best bet – order a lot, split and try it all!

B.A.D. (Breakfast All Day)
– Natural Angus burger, American cheese, hickory bacon drizzled with maple syrup, fried egg, hash browns, grilled diced onions, and ketchup.

You’re kidding me right? How does anyone say no to this perfect blend of my two favorite meals: Breakfast & Burgers! First off, the Patty was exactly as promised; juicy, bursting with all natural Beef flavor and cooked fresh. I’d bet a simple Patty + Bun combo here is delicious all on it’s own. i’m not a Sweets person but I’m most definitely a sweet meets savory person so adding Maple Syrup to Hickory Smoked Bacon is like writing a love song to my stomach. It matched well with the Onions and Egg, which yes, had a runny Yolk which is a major score on the Burger scale. The melty American Cheese upped the savory aspect and also gave a nice creaminess to the consistency of each bite. But then add a Hashrbrown underneath all of it and this Burger goes from great to what in Sam Hill are you waiting for already, go eat this darn-tootin Burger!

Texas Style Chili Cheese Dog
– All-natural dog topped with BurgerFi® Chili, Cheese Sauce, and Hot Sauce

As a native Detroiter, I love me a Chili Dog. Even though there’s nothing like a Detroit Coney, you’ll be hard pressed to see me turn down a Chili Dog especially at place serving as fresh of Food as BurgerFi. We cut this puppy into three slices and dug in. I’m not a Hot Dog guy. I like Burgers. In my opinion a Hot Dog is a Hot Dog is a Hot Dog. I can discern quality and there are some that I like more than others and others that I must have but in general, I’m not excited by wieners. But if, I was going to BurgerFi, I’d definitely consider going for this saucy, savory, little number that packs one serious tasty punch.

Cry & Fries
– Onion Rings and fresh cut Fries
There’s a lot of things you can do wrong to side items. BurgerFi does NONE of them! The Fries are thick, fried, golden and delicious. I heavily suggest dipping them into some custard for an additional sweet meets savory Food escapade. The Onion Rings, whoa the Onion Rings! They’re made from what appears to be half a large Onion battered in a warm, flaky crust and they are not to be missed. I suggest splitting with a friend because these Rings are not here to play a game of toss.

O.M.C. (Oh My Chocolate!) Concrete®
– Chocolate Custard, Peanut Butter, Brownie, Chocolate Chips, and Chocolate Sprinkles
You heard me say that I’m not a sweets person but how does any serious eater read that and not want to immediate cram it down their pie hole!?!?! By this point in meal (yes I’m a hunt and peck eater) there wasn’t much room in my on board Burger processing facility so I was only able to make it through a few scoops but every single one was worthy of one more.

I’m sure a lot of people like Burgers but I LOVE them and when I eat them, I want to know that they were made with that same passion I have for them. That’s exactly what you’ll get here. The folks at BurgerFi love food as much as they do sourcing it, making and serving it and if you are a Food fanatic, you are going to love eating it.

  • Rows and rows of Cakes, Pies & Cookies
  • Shiny exterior, bright neon lights

If this group of phrases means something to you, you’ve eaten at a NJ Diner and more than once.

NJ Diners are a long standing staple of the restaurant scene in the Garden State. There’s one or more in nearly every city and county. Most are open 24 hours a day and offer everything from Omelets, Salads, Sandwiches, Pasta, Greek Specialties, Chops, Roasts, Seafoods & Desserts. There something on the menu to please every palate.  and everyone has their favorite dish that corresponds to a time of day. Mine a Breakfast Wrap in the morning,  a Gyro & Fries for lunch or dinner and late night Grilled Cheese with Bacon and French Fries with Gravy.

Of all the diners in NJ perhaps one of the most well known is located right on the side of Route 3 in Clifton, NJ. The Tick Tock Diner is a shiny beacon of delicious Food and good service that is one of the most loved restaurants in the state. So what makes this diner different than any other? Perhaps it’s fresh ingredients they use or the incredibly friendly and warm staff that greets and serves you. Maybe it’s the location where it’s stood on a popular stretch of highway since it’s 1948. It could be the Tick Tock’s St. Louis-style Spareribs that are hickory smoked to perfection and their award-winning Rich & Sassy sauce. The truth is, it’s all these things that attract not only customers but also the eye of Guy Fieri and Diners, Drive-Ins and Dives who filmed an episode here.

Or it could be the insane Burger menu featuring 14 different Burgers including a Falafel Burger, a “Jersey Shore” Burger topped with Disco Fries and “The Crown,” a Burger topped with American Cheese, Grilled Onions, Russian Dressing and PASTRAMI! The Tick Tock Diner exclusively uses high-quality Beef from Pat LaFrieda Meat Purveyors for their Burgers so you’re pretty much guaranteed a premium Burger experience.

THE BURGER
Even with all of these crazy options, my gut reaction was to just get a simple Cheeseburger. Before I even took my first bite, I know this was going to be a good Burger. How? The first thing I noticed was it had Cheese on both sides of the Bun. That’s a sure sign that the restaurant knows what’s what when it comes to tasty Cheeseburgers. The patty classically char-grilled with the grill marks to prove it and packed with a big classic Beefburger taste to go with it. The Bun is a soft but sturdy Sesame Seed Bun. With the fresh Crispy Lettuce and tasty Cheese, this Burger didn’t need anything else maybe than a little Salt and Pepper. Having said that, I’d definitely be curious to try “The Crown” or The Rach Burger with Crisp Bacon, Swiss Cheese, Ranch Dressing & Onion Rings. Beware, the Tick Tock Diner’s huge, thick cut, crispy, golden Steak Fries are served center of the earth hot. Be sure to let them cool down before eating.

THE CONQUEST
Many a moon ago, I enjoyed a tasty Burg’ at Bobby Flay’s Bar Americain with  my friend’s Scott & Jackie. In review of said Burger Conquest, I said “Mr. Flay, you have made one tasty burger and I looked forward to someday eating at your burger palace.” Well folks, you can now say I lived up to my word.

As far as food fame goes, Bobby Flay is a top player in the game. He’s an accomplished author, publishing several popular cook books. He’s not just a restauranteur, he owns multiple locations of multiple different concepts in many different cities including the Bahamas. Bobby has also been the focal point of many popular and on-going Food TV shows. I’ve never met the guy but he certainly seems pretty likable and no one I know never has anything bad to say about the guy. Bobby Flay has hit the food jackpot by being nice, working on his talents constantly and never resting on his laurels.

If you’re a serious eater like I am, ya gotta pay some respects to @BFlay.

Bobby’s Burger Palace is a multiple location, fast-casual Burger joint. The menu is limited to an array of unique Burgers, Salads, Sandwiches & Sides. Once you enter a location, you immediately get into line at the counters where you place the order for your Food. Once you’ve done that you’re given a number and move into the dining room. Drinks are serve yourself from a modern drink fountain. Then you grab seat, placing your number in front of you. All tables are communal, some traditionally rectangular while others are long winding counters convenient for single diners or groups. While you’re waiting you can see what’s happening in the kitchen through a large open space that looks right into the prep area. Once the Food is ready a smiling and courteous BBP employee brings you your meal.

THE BURGER
The Burger menu is no joke and I had to let several people pass me in line before I was able to decide on a Burger. I ordered the Santa Fe Burger – Queso Sauce, Jalapeños & Blue Corn Chips ordered medium rare on a soft Sesame Seed Bun. This one seriously juicy Burger! The Jalapeños are mild in terms of heat but also a little on the smoky side in their taste. The Queso Sauce is very creamy am has a much lighter flavor on the palette than your standard salty American or Cheddar Cheese. There’s not a ton of Chips but they add a nice little crunch to the bite. The Beef is good and tastes of all natural and fresh Beef flavors. The Sandwich is just the right size. You won’t leave hungry nor will you feel overstuffed after you’ve eaten in.

The Sweet Potato Fries are tasty, hot, crispy, golden and delicious. The sweet Honey Mustard Horseradish Sauce they come with has a nice little kick. I would’ve like a little more Horseradish but that’s just being nitpicky.

On the tables you will find Ketchup & Yellow Mustard along with several of Bobby Flay’s signature sauces.  I tried them all.

  • Chipotle Ketchup – Has a really nice tang and is a little smoky. The Ketchup has just enough heat to make it fun but not really hot.
  • Burger Sauce – This one is unique. I really couldn’t place where the flavors are coming from. Best I could describe it: a smoky, Chocolate meets Mustard Worcestershire Sauce.
  • Jalapeño Hot Sauce – This one’s sweet with just a little heat. It would be great on a plate of Nachos.

Overall, the Burger at Bobby’s Burger Palace it’s a good old American Cheese Burger underneath some really interesting toppings.

This one is a doozy! First you’ll be greeted by head bartender Trevor Schneider who will teach you how to make a bourbon smash with Larceny bourbon. Yes, you’ll be drinking one of them while you ask any bourbon questions you have to a representative from the Larceny distillery.
 
Then you’ll move into The Den, Harding’s private whisky room, where you’ll experience an intimate tasting lesson with Elijah Craigh bourbon. You’ll be served a paired dish of Chef Ariel Fox’s crispy Yukon potato skins with shaved blue cheese.
 
From there you’ll take a walk into Harding’s kitchen where Chef Ariel Fox will explain how they make their burger with a custom blend of 80/20 lean to fat ratio mix of chuck and skirt beef that is then mixed with a 30% ratio of short rib.
 
The small group of you will then be seated at a community table on Harding’s VIP balcony dining table where you’ll devour said succulent Burger along with some skin-on rosemary frech fries with a paired bourbon cocktail.

Due to the intensity of this event, there is a very limited amount of tickets. Sleep on this one and you’ll be sorry.

The Off-Menu Burger Bash is NY Burger Week’s signature event and where it all started. We’re extremely excited to be bringing this delicious event to 67 Burger in Park Slope. Chef Jeff promises to whip out some doosey Burgers including his famous “Pastrami Burger.” Grab a bud & join us for what will be an awesome Burger party.
