Sometimes you just need to get in the car and go. Sometimes you just need a hang with the boys. Sometimes you just need a heaping dose of comfort Food and Beer. Sometimes you just need an excuse to get the heck out of town and have a good time. Then there’s those other times when you need it all at once and that is why I created …

THE BROD TRIP
Take the eateries from the Food Network’s “Diners, Drive-In’s and Dives,” add in a group of friends like on HBO’s “Entourage” and sparkle it with a dose of Roadside America and you have THE BROHD TRIP. It’s basically an excuse for a couple of bro’s to get out of town and have some fun driving around this great country of ours eating food, drinking beer and seeing some randomly random stuff.

I have been planning this since December with my bro’s, Leo, Bram & Adam. Due to various set backs, including a snowstorm and Adam becoming a contestant on this summer’s season of “Big Brother” on CBS. After several start / stops and re-routing’s, we were finally able to pull out the first (of many to come) BROHD TRIPS.

When you want clothes, you go to Macy’s. When you want groceries, you go to Shoprite. When you want electronics, you go to Best Buy. When people want to seriously hunt some beasts and or go off and live in the wilderness, they go to Cabela’s. It’s THE ultimate shopping destination for outdoors men. Tents, guns, camouflage, fishing rods, bows and arrows, duck decoys, you name it and more, Cabela’s is the penultimate destination to purchase these things. Nearly every vehicle in the parking lot was a 4×4 truck, which has to necessary when transporting ground blinds and full sized black bear archery targets!

They have a location that is 2.5 hours East of NYC and about an hour or so North West of Philadelphia in Hamburg, PA that has something very special to offer. Amongst the 250,000 square feet of inflatable deer, trolling gear, glock magazines, freeze dried rations and skull-mounting kits is a staggering collection of “museum-quality animal displays, huge aquariums and trophy animals interacting in realistic re-creations of their natural habitats.” Walking around this amazing store is like half being in a Museum of Natural History and the most far removed retail collection of urban necessities you could ever imagine.

The deer taxidermy alone has it’s own wing of the building called “Deer Country”.

The aquarium holds 55,000 gallons of water and living fish.

Any road trip that passed through Hamburg, PA and did NOT stop, is NOT a road trip that I want to be a part of it. Of course we had to pull over and drive through the town of Hamburg, PA. It’s the city that hosts the annual “Taste of Hamburg-er” festival every beginning of September after all. After finding the “Welcome to Hamburg” sign for a few photos and a quick tour around town we stopped for gas.

I announced to the guys, “I can’t come to Hamburg, PA and NOT get a Burger. Let’s get something to eat.” A quick check of the “Burger GPS” iPhone app came up short and we had to improvise.

The Hamburg Diner is the kind of classic short order diner that America is made of. Places like this are a true slice of our heritage serving all kinds of American comfort food and European pass down dishes, specifically Penn-Dutch like Potato Salad,  Chicken Pot Pie, Fritters, Dumplings and Pies, all of which is washed down with the non-alcoholic Birch Beer. It’s a place where locals gather to eat and catch up on Sunday mornings and stop in for a workman’s lunch on a weekday. Dressed with tables, booths and stools at a counter with a checkered floor, the Hamburg Diner couldn’t have been a more appropriate place to eat on THE BROHD TRIP.

The incredibly friendly staff ushered us in with a big smile and invite to sit where ever we wanted. The 3 of us grabbed 3 stools at the counter right in front of the flat top griddle. They have menus but encourage you to just order whatever you want. “You guys don’t need menus right? Just tell me what you want and we’ll take good care of you.” Our server took one look at Leo and asked “do you like Country Gravy? We serve it over Biscuits and it’s one our specials.” That’s all Leo needed to hear. Bram got himself a Ham, Egg and Cheese Croissant and me, well you can probably guess.  “I’d like a Cheeseburger please. Can I get that as medium rare as possible?” Jokingly our server replied, “let me go out back and cut it right off the steer.”

She scribbled down our order, placed the ticket above the griddle on the kitchen hood and the owner of the restaurant began to cook up our meal.


Even though my Burger was made with an over cooked frozen patty and served on a regular old White Bun, I loved every bite of it. Sometimes nostalgia and environment outweigh everything else.  I was stoked as hell to be eating a Hamburger at the Hamburg Diner in Hamburg, PA with 2 of my best Bro’s. As I was about halfway through my Burger, the game changed. The server asked me if I wanted some of the Country Gravy for my Home Fries. In a very Br’er Rabbit like response I said “YES I WANT SOME COUNTRY GRAVY!” As I spooned the thick and savory White Gravy with chunks of Sausage in it over my Browns a light bulb went off in my head and I proceeded to pour some over my Burger. Say whatever you want, it’s ok because this is what you do on a BROHD TRIP. I name this a Country BROHD Burger and I will cherish its memory forever.

Beer is a mandatory party of a road trip and visiting a Brewery is a mandatory part of a BROHD TRIP. What better Brewery to visit than Yuengling, America’s Oldest Brewery. Located in Pottsville, PA, this 5th generation run company has been making Beer since 1829. Tours are available for a very short period of time Monday – Saturday as they do still make delicious Beer here EVERYDAY.  Get there early as the tours are not only very popular but you’ll also want to spend some time walking around the Yuengling Museum located in the gift shop. They have memorabilia including cans and bottles that date back into the early years of the brewery. Before entering, take notice of the now defunct Yuengling Ice Cream family that kept the company in business during the prohibition era.

According to their website, the Brewery tour promises  you’ll “Discover the hand-dug fermentation caves that were used for storage before refrigeration. Wander through time and enjoy a taste of living history in a building that has produced fine beers through times of peace, prosperity, upheaval and world war.” The tour starts in the hand-dug caves that if needed could still be used today to make Beer the “old way.”

From there, the tour guide takes up into where the Beer itself is actually cooked and processed. The room is unbelievably warm and has no air condition or man made heat to speak of. It’s all controlled by the natural environment including a beautiful glass ceiling intended to shield the workers from the hot rays from the sun.

After taking a look at how the Beer is made, the tour takes a turn into the distribution side of things. From brewing to fermenting to bottling / canning and shipping out, this brewery produces upwards of 600,000 barrels of Beer per year.

Once the tour is complete you are lead into the Yuengling Pub where many a TV show have been filmed. You’ve probably seen Dick Yuengling and any other number of characters chatting about Beer here from your living room. The Yuengling Brewery makes 7 different beers and after you’ve taken the tour, you’re invited to sample some in the pub. Sadly for us who after re-falling in love with this incredibly important piece to history of America’s commerce, we wanted to drink them all, however they have a “one sud Saturday” policy. It’s due to huge number of people who come through to enjoy a piece of history.

If you don’t walk out of this tour completely head over heels in love with Yuengling Beer and it’s rich history, you should move back to Germany and drink more Hofbrau.

Anyone that has ever driven through Pennsylvania or most parts of it’s adjoining states knows about the glory of Wawa. Any East Coast foodie knows that convenience store / deli / sometimes gas station chain WAWA is the bomb!! With their Ready-to-Go Snacks, tasty side dishes, refreshing Iced Teas, Fresh Brewed Coffee, delicious Sizzli breakfast sandwiches and of course, the best thing about Wawa, Built-to-Order Hoagies and Sandwiches!!! Just walk up to the computer screen and start mashing those hungry little fingers on the touch screen.

While I would normally get a Wawa Hogie, I was still feeling full from the Hamburg Diner’s Country BROHD Burger. Instead, I opted to go snack style and get a small order of Wawa Meatballs and Cheddar Filled hot Pretzels to split with my bro’s along with some MANDATORY Wawa Lemonade Iced Tea to wash it down.

In 1996, I took a permanent road trip, moving myself from Lansing, MI to New Brunswick, NJ. That very same year, German beer institute students Bill Covalesky & Ron Barchet opened the Victory Brewery on the former site of a Pepperidge Farm factory. They’ve been pumping out delicious American beer that’s rooted in many German brewing ideas and traditions. The brew pub holds a rotating list of various regular, seasonal and special brews that changes on a daily basis. They also offer a menu full of great culinary treats almost all of which is paired with specific Victory Beers. Whether you’re a Foodie, Beer Nerd or just like to have a great experience, it’s a fantastic place and a great company.

Anyone that knows me or has paid a visit to my NYC bar, Idle Hands, knows that I LOVE Victory Beers, which FYI pair very well with Slayer songs. While we had several Beers on our trip to Victory, there was one that stood out from the pack.

VICTORY SCARLET FIRE RAUCHBIER

  • Smoked
  • 5.8% ABV

THEY SAY: Exotic yet mild lager… Sublime complexity and intriguing malt character glow from this traditional amber lager. The hallmark beer style of Germany’s Franconia region, this beer features beech-wood kilned malts for a softly smoky and rich flavor. Overall mild and mellow, this one’s a fascinating treat!

REV SAYS: If this Beer was a sandwich, I’d say it was tick-cut, slow-cooked Country Bacon on toasted Whole Wheat bread. If it was a Star Wars weapon, i’d describe it as being half Light Sabre, half Jet Pack. What I am really trying to say is, this Beer is freaking awesome and kicks a whole bunch of ass!

Leo ordered a Wedge Salad covered in Blue Cheese, Marinated Flat Iron Steak, Bacon Crumbles, Red Onions, Tomato & Smoked Tomato Dressing paired with Uncle Teddy’s Bitter. The Bitter and Creaminess of the Beer’s flavor did indeed match up with the savory and thick flavors in the Salad.

Bram and I, completely unable to order just ONE entree decided to split two of them. A “Hickory Prime” Sandwich with thinly shaved Prime Rib on a Sourdough Panini with Provolove, Pickles and Wasabi Aioli paired with a Hop Devil Ale. The bright and spiciness of Victory’s Hopped out IPA made for a fantastic match up to the salty flavors and soft textures of the sandwich which on it’s own was actually more mild than I expected. Please do note, I definitely removed the Pickles from my half of the Sandwich.

The last item on our order was the “Jerk Grinder,” a long Roll Sandwich with roasted Jerk seasoned Chicken, with smoked Gouda, Chipotle Mayonnaise, Roasted Peppers, Lettuce and Onions paired with a Festbier. Now technically, this is an incorrect pairing and in fact, Victory suggests you eat it with their Saison, Helios Ale. The idea being that the spices in the Sando mix it up with the sweet and sour tastes in the Beer to balance each other out. But to understand the rules, you have to know how to break them!! Festbier is Victory’s take on an Oktoberfest / Marzen which only comes out in the fall. As a malt fan when it comes to beer, I love it’s smooth bready taste that is achieve by cold aging it. I also figured the malt flavors would actually flow behind the Jerk Spices giving a secondary taste to the Sandwich. I was right and it was awesome!

Located all the way at the end of the Victory Brewpub is their retail location. There you will find all kinds of Victory apparel as well as a fine selection of their beers which are welcome to mix-n-match (six packs, large format bottles, growlers and barrels.) Before selecting a number of fine Victory Beers as a present for our friend Mike who was putting us up that night, something caught my eye. Over in the corner is a standing cold box with a glass front. Inside of it, Ice Cream made with Victory Beers. After much debate, Bram and I decided to get Storm King Crunch, chocolate ice cream made with the wort from Storm King Stout, with chocolate malted milk balls. Sounds good doesn’t it? Allow me to confirm, it was AMAZING and lasted maybe 8 minutes.

This restaurant may look like any other rail car style diner you’d find out their in the middle of America but this one has a story to tell. Once, in 1958, a man saved the Earth from a hideous space creature intent on destroying all of us from this very location. Back then it was called “The Downingtown Diner” and actually no longer exists and that man was Steve McQueen who was acting in a movie called “The Blob.” None the less, this is the location that now marks this famous movie location.

Chef Macjon’s is only open for breakfast and lunch so we weren’t able to try the food. Their most famous dish is the “BBQ Blobwich.” Which I’ve seen on Cantab Publishing describe as “a sandwich that consists of chicken and peppers covered with what tastes like equal parts BBQ and Sweet and Sour sauce from the Chinese restaurant.” I’d certainly have tried it had they been open even though I was totally full from all the day’s eating.

However, that wasn’t the end of it. We hopped back in the car and drove South 124 miles for another piece of history from the same year…

There’s a lot of great Burgers in this country and there’s a lot of history around many of them as well. Few of them play as significant a role in the history of the growth of a city as much as the original Ben’s Chili Bowl of Washington DC. Beyond that, even less of them have a stellar reputation for delicious food like Ben’s.  I’m going to give a quick paraphrasing but please do yourself a favor and read the entire story on the website for Ben’s Chili Bowl.

Back on August 22, 1958 Ben and Virgina Ali, newly married at the time, opened a new business on the former site of the Minnehaha Theater. Ben’s Chili Bowl was born in a section of Washington DC that at the time was known as “Black Broadway.” Many a famous performer frequented Ben’s when they were in town to perform as it’s popularity grew. In 1968 when DC was stricken with riots centered around the assassination of Dr. Martin Luther King, Ben’s stayed open, guaranteeing locals trying to restore order to the city, somewhere to get a hot meal. After a bustling decade in the 70s, in part to a party thrown by Bill Cosby who was celebrating his number one rated show, the 80s brought about the opposite. Construction of a city train stop opened a massive hole right in front of Ben’s bringing business almost to a halt. The only thing that helped them stay alive was feeding the construction workers. Ben’s Chili Bowl persevered the lengthy set back and has gone on to be a landmark food spot in DC winning many award along the route. Unfortunately Ben passed away in 2009 but his legend lives on in the restaurant. It’s now run by 3 of their children using the same counters, booths and of course, secret Chili recipe that thousands of people have come to know and love.

Outside of the obvious reasons, I’ve been waiting for years to eat at Ben’s. Not only due to the history but also as a native Detroiter, I grew up eating Chili on my Burgers and Dogs. My order tonight on the BROHD TRIP was quite simple, a Chili Cheese Burger. All orders are placed right at the grill upon entering Ben’s. Once your food arrives, find yourself a seatin any of the 3 dining rooms and enjoy. As I sunk my teeth into this insanely historical Burger, I had to remember to take it slow and enjoy every delicious bite. The freshly ground beef is really not the focus here even though on it’s own, makes a great Burger. The star of this show is far and above the Chili. Coming from The D-Town we take our Chili VERY seriously, building life long relationships with the Coney of our choosing. But let me tell you this, Ben’s Chili has earned it’s place in food lover’s hearts. It’s smoky, savory and sitting on top of a delicious Cheeseburger. One bite of a Chili Cheeseburger from Ben’s Chili Bowl is all you will need to know why their restaurant has stood the test of time and remains a favorite of all who’ve been through it’s doors.

After a long day of driving, eating and sightseeing, it was time to give our designated driver Leo a break. We pulled into our friend Mike’s house, dropped our bags and walked into town. Mike and Caroline, although out of town, let us stay at their house to save a couple beans on the trip. Mike left us a note that had a suggestion for a local watering hole if had need of libation. That place was the Quarry House Tavern, a speakeasy type bar, located in a basement bar that’s known for their Bourbon, Beers and Burgers. (Sound familiar?) We had planned for only stay for a drink or two but upon walking in, we ran into a friend of mine, Diamond Dave, who I hadn’t seen in years. What are the chances? We hung with Dave and his buds until we closed the joint down ending a monumental first day of THE BROHD TRIP.

We woke up quite hungover but happy to have had some rest and thanks to Leo’s coffee run, some necessary caffeine. Soon we were back on the road, pointed about 45 minutes North to Baltimore.

If I asked you “where did you have the best Italian Sandwich you’ve ever had,” do you know what you would answer? I do. The Scooch from Isabella’s in Baltimore. This tiny little cafe and grocery store sells a small selection of Italian grocery items along with a hand selected menu of Italian goodies like brick oven Pizzas, Sandwiches, Salads and sides. With barely enough room for 12 people to seat, this Little Italy staple always has customers in the house.

Most of them are coming for one thing, The “Scooch” – Capicollo, Soppressata and Porchetta with Gouda Cheese, Roasted Peppers and Lettuce in a Balsamic Dressing. Sounds like any other Italian sandwich right? I’d agree with you and when I was first told about it, I had too held the same questions and possibilities of disbelief that you have right now. But much like me and now like Leo and Bram, when you finish eating the Sandwich, you’re going to pause, take a breath, collect your thoughts and finally speak; “I think that was the best Italian Sandwich I’ve ever had.” Why? Because even after you’ve eaten it yourself, you’ll still find it hard to believe. Seated on the most perfect and crunchy warm Italian Bread you’ll ever eat are fresh and warm Meats and Cheeses with wonderfully roasted Peppers and crisp Lettuce with the tangiest Balsamic Dressing you’ll ever eat.

You can try to eat an entire Scooch and I wouldn’t stop you from doing it. However, at least take a moment to consider saving room for one of Isabella’s stuffed Peppers. They take green and red Peppadew Peppers, hollow them out, fill them with Prosciutto and hard Italian Cheese before allowing them to bath in Extra Virgin Olive Oil to soak up the flavor. They’re ALMOST as good as the Scooch and definitely worth taking one down before moving onto the sandwich.

It was just our luck that this weekend in Baltimore’s Little Italy was the Festival of Saint Gabriel. It’s the 2nd part of a two part celebration of the summer held around the Church of St. Leo the Great. The Festival of Saint Gabriel marks the end of the summer season by filling the streets with Food, Drinks, Games, Shopping complete with bands and a bocce tournament. We had no idea it was happening but it made for a fun twist to the adventure. Leo was especially excited to get his photo in front of the Church of St. Leo the Great.

Macabre and mystery author, Edgar Allan Poe, originally born in Boston, MA was eventually buried in Baltimore, MD. He was most famous for a poem entitled “The Raven” about a man’s journey into insanity but also known for his stories “The Pit and the Pendulum,” The Masque of the Red Death,” and many, many more. I figure if you are going to visit anyone’s grave, someone like Edgar Allan Poe is perhaps one of the most appropriate! Fun part of it, EAP actually has to graves in the same graveyard!

What can I tell you? The allure of Wawa is too great especially with the great food, amazing drinks, convenient locations, gas stations and clean bathrooms. Wawa is custom made to fit into a BROHD TRIP. On this one I got Wawa Green Tea, Hickory Smoked Beef Jerky and a Wawa Shorti. My fave Shorti – Smoked Turkey, Provolone, Lettuce, Onions, Creamy Horseradish Sauce, Salt, Pepper, Oregano, Salt, Pepper and Banana Peppers and I ask for the whole Sub toasted.

In 1968 Finnish architect Matti Suurone created a vacation home that would fit on the side of a mountain. The two major requirement he was under were that the home needed to be transported easily and also that snow would fall off it easily. This style of house was dubbed “Futuro” and was designed to withstand the high winds of a snowy mountain environment. Less than 100 of them were manufactured and originally they were made with custom designed furniture made to fit it’s unique shape. If you want to buy one for yourself, this guy is trying to sell his. He also has some great information about Futuro. So far on this history adventure known as the BROHD TRIP we’ve gone way back in history but this stop in particular goes nearly 200 years more in the past than the formation of the Yuengling Brewery. In 1631 the Dutch settled this now area of Delaware and named it Swanendael, meaning “Valley of the Swans.” Their settlement was short lived as just about a year later they were extinguished by a group of local Algonquians over cultural misunderstandings. To pay tribute to the 300th anniversary of the European settlement, made to look like the former City Hall in Hoorn, the Netherlands.

Also located inside Zwaanendael Museum you’ll find something very unique. Believed to have been created in China in the mid 19th Century and according to the Museum’s site, is made of fish, hair, ivory, a shrunken monkey head, oak, stain, varnish, glass, and dye. Items like the Merman were created for Sea Captains to return home with mysterious great stories of their sea fairing ventures to the orient.

Today, it’s there to give a couple of guys on a goofy road trip an excuse to do something they would probably never do otherwise. On the way out of the museum, the curator asked us what wine we thought the Merman would pair with.

Dogfish Head has the honor of calling themselves Delaware’s first brewpub, opening originally in 1995 by now well-known brew genius, Sam Calagione. His dream was to bring original Beer, Food & Music to the area. Their original system could only make 12 gallons of Beer at a time, less than 2 – 1/2 barrels (what you would consider a “keg”) a far cry from the massive production they have nowadays! The brewpub also boasts a wood-burning grill still used to cook up their delicious and “interesting” dishes. The majority of Dogfish Head beer, which is sold in 25 different states is made up the road in Milton, DE in their massive brewing production house. However nowadays, they distill Rum, Vodka & Gin in the brewpub.

As the Beers available on tap at the Dogfish Head brewpub are constantly changing and often feature brews you can’t get anywhere else, we couldn’t wait to get there and suck down a bunch of ’em.

A powerful, but balanced East Coast I.P.A. with a lot of citrusy hop character. The session beer for hardcore beer enthusiasts!

REV SAYS: – this is an IPA for IPA drinkers who like the flavor of hops but don’t want to just drink a cold glass of water and hops. This is the WWE’s Tag Team Championship match IPA answer to the ECW’s barbed-wire match IPA.

THEY SAY: Black & Red is a velvety smooth dry-minted stout with a serious fruit problem! The huge portion of heavily roasted grains brings a dry, chocolaty character which contrasts its sweet fruity full body. As you tilt your glass, youll notice that the black color you are perceiving is actually a very deep reddish hue and the rich creamy foam has a tinge of pink to it. Black & Red starts off roasted and warming with a robust mintiness from 100lbs of organic mint (from our friends at Washington’s Green Grocer) added to the secondary fermentation and finishes out sweet and smooth.

REV SAYS: Tastes likens fruity mint chocolate stout and I’d imagine is fantastic over ice cream … if you’re over 21.

THEY SAY: Limb & Life is a ‘small’ beer, made from the second runnings of the larger brew, Life & Limb. Limb & Life has a roasted malt flavor reminiscent of dark roasted coffee and toasted bread, combined with a pronounced hoppiness from the use of bold and aromatic American hops.

Limb & Life is an easy drinking ‘session’ beer – an antidote to the heavy sippers, and a beer that begs for another glass. It is balanced yet flavorful, hoppy yet not without strong malt, and drinkable but still complex.Limb & Life will be an extrememly limited draft-only release.

REV SAYS: It’s like having cold leftover pizza, it’s in no way comparable to it’s original form but should be cherished in it’s own special way.

The Beer at Dogfish Head is only part of the reason to go there, or so we had been told. I had read prior to our visit that they were so proud of their Burger that it got it’s own section on the menu. They were right. Taken directly from that menu:

I love it when I don’t have to make any decisions on a Burger menu. Usually that’s because I will want all of them! Here, it was either order what they suggest or start from scratch by building a Burger. I was too tired and too excited to even try. The Dogfish Head Indulgence Burger is appropriately named but if they were searching for an alternate I’d suggest “MASSIVE.” I could barely get my mouth around it and had to attack it, bite by bite, coming after each approach from a different angle.

The Burger has a really crunchy Bun but not in stale way, more like you would expect from a French or Italian loaf and yet still as a Burger Roll. The ground Beef patty is really flavorful with a very slight smoke flavor that comes in over the natural taste of quality Beef. Extra crunch comes from the sweet Onion Ring. My only complaint? The Bacon, there wasn’t enough. It definitely tasted great but in smaller bites it just didn’t have the effect I was hoping for. Don’t get me wrong, it’s still a damn good Burger!

2 key suggestions if you are going to pay a visit to the Dogfish Head Brewpub;
A. Don’t show up at dinner time otherwise you can expect a wait of up to two hours, unless it’s Nov-Feb.
B. Do not sit at the 2nd table from the hostess stand next to the bar on a day where they have the air conditioning cranked. The air vent is directly above the table and not only will you be cold, so will your food.

Other than that, the awesomeness of the Food & Drink is only matched by the awesomeness of the friendly and accommodating staff. Unfortunately we only had 45 minutes to enjoy as we had to catch the Ferry back to Cape May, NJ. A return trip is most certainly in order and next time, we have to visit the actual brewery.

We bolted outta Rehoboth Beach as fast as we could but as soon as we jumped into the car the rain started. As a result, traffic slowed down and you guessed it, we missed the ferry.  Between the rain and missing the ferry, that pretty much put the kibosh on any other plans we had which included riding roller coasters at Morey’s Piers in Wildwood and stopping at the White House Sub Shop in Atlantic City.

With plans thwarted we had to reroute home and when the need to stop for gas arose, Leo made a call. We could’ve stopped anywhere but he wanted to brighten up the mood a little and took us to get gas somewhere we would all enjoy. My thick and tasty Coffee Flavored F’Real Milkshake was thick, tasty and awesome.



From Smyrna it was a long, rainy and traffic-laden drive back to the NYC area. But it was one I will never forgot and not just because I spent nearly 12 hours writing this post but because I had a super blast hittin the road with 2 of my favorite Bro’s. We have to do this again fellas once Adam gets himself out of the Big Brother House!

THE CONQUEST
On my 16th birthday, my friends asked me what I wanted to do to celebrate. My answer; “let’s BBQ!” 22 years later, I still uphold this tradition with 2 BBQ’s. 1. The annual Kev and Rev’s Awesome Parking Lot BBQ at the Nassau Coliseum stop on the Warped Tour and #2. Birthday Camping at Skinner’s Falls Campground. The camping trip is by one of my favorite weekend’s of the year despite the fact that it has rained ALL 6 YEARS we have done the trip.

Skinner’s Falls Campground is run by Lander’s River Trips, a company that was founded in 1955. They have 10 locations along the upper Delaware river for camping, rafting, canoeing and in general getting out of the big city. The campsite at Skinner’s Falls is always ridiculously well maintained, clean and staffed with friendly people who want to help campers enjoy a fantastic outdoor experience. For us that equates to what is essentially a 36 hour tailgate where the grill is only turned off so we can all float down the river on rafts. We only have 1 rule hard rule enforced during birthday camping, no one touches the grill but me without my permission.

It’s about a 3 hour ride North West from New York City and the minute you cross into the camp ground, you are guaranteed to lose cell phone reception. We break up the drive with a stop at Walmart for camping necessities and then at Peck’s Market in Narrowsburg, NY for food & beer.  For this year’s trip we also made a stop off to eat some Burgers for lunch at Sonic Drive-In. I’ve had $120 in gift certificates burning a whole in my wallet for ages and seeing as how we had a rental car and it was en route, sounded like the perfect excuse to feed my friends.

It’s 1959 and two men, Troy N. Smith Sr and Charles Woodrow Pappe change the name of their drive-in root beer stand in Seminole OK, then named “Top Hat,” to Sonic. A revolutionary fast-food experience was born into a franchise that now proudly boasts more than 3500 locations in 43 states, including Hasbrouck Heights, NJ, just a few miles outside of Manhattan. Sonic Drive-In is a franchised, modern day version of the 1950s car hop drive-in. There are no dining rooms available and motorists order from their very own two speaker menu and then eat right in their car. Most locations offer a few picnic tables for those looking to eat sans motor vehicle but there is no dining room to speak of. Sonic’s are more common in the South and Midwest so for us city slickers, this was truly a unique experience.

THE BURGER
With $120 in gift cards, I suggested that everyone go buck wild and order everything on the menu that even remotely struck their fancy. That’s exactly what they did, one after another with the most popular item coming out as Chili Cheese Tater Tots.

Once all the food arrived, via carhop, to our picnic table, we put all the sides in the middle as if we were having a fast food dinner served family style. French Fries, Onion Rings, Tater Tots, Chili Cheese Tots, Mozzarella Sticks, Cheddar Peppers & Popcorn Chicken was strewn about the table amongst all the Burgers, Chicken Sandwiches, Breakfast Burritos & a mountain of condiments.

I started off with Sausage, Egg & Cheese Burrito which is just about my favorite breakfast food Sandwich on the planet. That’s one of the great things about Sonic … breakfast is served ALL DAY! It could’ve used a little more ingredients and less Tortilla but overall, a satisfying experience. From there I moved onto my Super Sonic Double Cheese Burger. I ordered it no tomatoes and no pickles. Should’ve known better and just gotten it plain with Cheese. I loathe Ketchup on a Burger and unless its spicy Mustard, I don’t want that either. Regardless, for a fast food Burger, Sonic delivers the goods, especially on the double Patty which also means Double Cheese. If there is anything that makes a fast food Burger tastes great, it’s EXTRA slices of processed Cheese Food. Health concerns and freshness desires aside, I will always have an appreciation and craving for it’s salty goodness.

Then it hit me. Why go the everyman route and just gnaw down on my ‘Burg? With all these tasty treats laying about the table, I decided to go super stack and create my own New Brunswick, NJ style Fat Cat Sonic Burger Abomination. I added in Chili Tater Tots, a Mozzarella Stick and an Onion Ring into my sandwich. While everyone just looked at me in disbelief, I bit into it relishing every heart stopping calorie that was racing through my system. This move also solved a problem I had not considered, covering up the taste of ketchup. Winning is NOT just for Charlie Sheen.

Sonic Drive-In makes a great Burger that stands on its own against their competitors but definitely has an edge with their awesome sides and unique presentation.

Try as we might, the 8 of us ordered a multitude of Sandwiches, Sides, Drinks and Desserts and in the end, even with 4 pages of receipts, we still only totaled out at $76.44! That means I still have another $43.56 to go on my next visit

After our gut busting lunch, we piled back into the cars and pointed ourselves towards Narrowsburg watching the skyscrapers of our fantastic city fade out in the rear view mirror. A few hours later we arrived into town, bought $550 worth of food and beer and we’re pulling into the campground. First things first, and that’s get the tents set up on the far end of the campground, an area we call tent city. Next up, the fire and fire pit seating area. Once the necessities are taken care of, well that’s when the fun starts. I flip on the grill, the Beers get cracked and the camping tailgate begins!

On Saturday morning, everyone awakes to the delicious smells of hot breakfast on the grill. This year we had Maple Sausages, Grilled Whole Grain English Muffins, Hash Brown Patties & Eggs over medium all served with Cheese as a sando.

From there we load up the coolers and hit the river for a rafting trip full of fun.

Once we get back to the camp site the grill fires back up and the food starts coming again, fast and furious.

I gave them points for that even though technically I shouldn’t have. Same for facebook. I was surprised that the Hasbrouck Height’s location was not set up on any of the social networks properly.

I don’t know if it’s due to a mutual love of Burgers and bars or if it’s because of my Pork Slapped Sausages, but my friend Jim has once again done me a solid. Jim recently emailed me and told me about a new spot in town that was rumored to have a great Burger. The best Burgers always come to me from friendly recommendations so I couldn’t wait to try this one but that meant Jim had to come eat it with me. Now that I think about it, that could’ve been his motivation!

Located right in the heart of NYC’s Fidi, Maxwell’s Bar & Restaurant has recently opened in the former location of the old school Italian spot, Spaghetti Western. Opting to keep some of the feel of a classic New York spot, this new jam opened by an ex Dos Caminos guy / Fireman feels like it’s been around forever. While the exterior and atmosphere are  under pronounced, everything else about the place is not. Their small yet intense menu is a mix of artisanal apps, Pizzas, Sandwiches and of course, Burgers. Maxwell’s also carries some cool crafty beers and a seasonal offering of cocktails. There’s also a rumored speakeasy called “Club Lombardo” coming underneath it this fall.

Upon arrival we were greeted by Alex, one of the owners who was friendly, smiling and generally excited about the new business. He asked what we wanted to order and after Jim and I both agreed on the signature Maxwell’s Burger, we asked Alex to give us whatever he considered to be the best dishes they offer.

THE  BURGER
While I would normally start my meal with a Salad or appetizer, when Alex brought out the four dishes, there was no way we couldn’t dig immediately into the Maxwell’s Burger. Alex explained that this unique sandwich was a “Cowboy Style” Burger which means rather than ground Beef formed into a Patty, it’s more like shredded Steak. Oh yeah baby, I’m ALL about that. The signature Maxwell’s Burger is Sliced Angus Rib Eye, Red Wine Gravy, Sautéed Onions, Fried Egg & Horse Radish Mayo. This bad boy is damn difficult to slice into half and keep from making a mess, but trust me, it’s all worth it. The Maxwell’s Burger is an intense mix of savory flavors that comes from a delicately preparation of really quality products. That Horse Radish is really underplayed as are the Sautéed Onions, both of which come out in the taste but never get in the way of the Sliced Angus Rib Eye. The Red Wine Gravy is so good that I actually think Maxwell’s could serve it on top of fry and allow it to be the dominate flavor in another dish. Yet, it’s used so sparingly so it only accents the sandwich. This one is a true winner.

From there we moved on to the Southwest Burger. This crazy number is made with  Angus Beef w Pepper Jack Cheese, Bacon, Guacamole & Sweet Chili Sauce. Really? Yes, that is really what comes on the Burger. It’s another tasty offering with a great mix of savory and sweet flavors. I really loved how the sweet and hot chili sauce mixes with the avocado and together they allow the sweetness in the ground Beef to come out.

From there onto the Duck Confit Salad. The idea of this seems so funny to me because generally I think of a Salad as a really boring food that I eat when I am not eating Burgers in an attempt to not completely blow up like a balloon. Getting excited about a Salad? That just doesn’t happen until now. It’s warm Duck Confit served on top of organic local Mixed Greens, Blue Cheese, Candied Walnuts & Grilled Pears with Cranberry Vinaigrette. A couple bites, which is all I could handle after the Burger madness, confirmed that this not your average boring old Salad!

We were filled to the brim with great food but Alex also brought us an order of Lobster Mac ‘N Cheese. I can’t stand Lobster (or any Seafood for that manner) but Asiago, Pecorino, Romano, Parmesan Reggiano and Truffle Oil made around anything will get me to try a bite! If you love Lobster, this dish is for you. If you love Mac, this is also for you. If you are like me and you don’t like Lobster know that dish is about the Lobster and I’m sure it’s good, it’s just not for me.

I truly loved this place and would definitely urge the Burger maniac inside of all of you to get down there and sink your chompers into the Maxwell’s Signature Burger, it’s a winner.

Four years ago, I hit up my buddy Kevin Lyman, the man behind the “punk rock summer camp” more commonly known as the Vans Warped Tour. The NYC area tour stop at Nassau Coliseum was happening on my birthday and I wanted to ask Kevin for passes. When I told him it was my birthday, there was no way of knowing that his response of “we’re going big,” would turn into tradition of intense magnitude.

Now known as “Kev and Rev’s Awesome Parking Lot BBQ,” this insane party of epic proportions kicks off every year at the close of the tour stop in Long Island. For weeks leading into it, I get dozens of emails, texts and tweets asking if the party is on. People tell me every year that even though they live closer to other shows on the tour, they specifically come to this one because of the BBQ. Kevin, not one to mess around, busts out with a massive smoker and cooks more than 100 pounds of meat to feed the entire tour and it’s guests. The two of us, especially Kevin, slave all day over the massive cooking giant preparing food.

But before we get into all of that, let’s talk about what is the Warped Tour. I realize that a lot of you who read this blog aren’t from the music world and even though this tour plays to hundreds of thousands of people every year, you may not know about it.

Back in 1995, Kevin, along with a couple of buddies decided they were bored from the same old, same old and wanted to take their South Cali scene of punk rock and street culture to the rest of the world. With some help from shoe and clothing manufacture, Vans, Kevin rallied up some punk and ska bands along with some skateboarders and BMXers and hit the road. To keep things interesting, fun and unique, Kevin devised a plan to keep all things equal asking all bands to play 30 minute sets on a variety of stages where the line up changed every single day. This meant that the most popular band on the tour would play the same amount of time as the youngest of acts and never at the same time as the day before.  Most of the shows are played in non-traditional venues like parking lots and fields. This not only kept the tour outside, it also helped to keep costs down and create a unique and fun day of music out in the sun. Each day, just before doors open, the show order is placed on a gigantic red blow up “Band Line-Up” wall that can be found next to the official Vans tent. This punk rock ethos has stuck with the tour and is a big part of what makes the Vans Warped Tour so special.

Along the years the tour has expanded past the punk world including rap, country, pop, hardcore, metal, dance and all sorts of genres, keeping the punk-rock feeling but allowing for a more diverse audience and music base. Tickets to the tour always remain low priced, subsidized by sponsors who want to introduce services, knowledge and product to the attendees of the tour. You’ll find everything from great causes and charities, to magazines, small & upstart clothing companies, music instrument companies, to big corporations like 7-11, Nintendo and Hollywood film releases. There’s even “reverse day care” tent where the parents who are there to chaperone their kids can go and relax away from the punk rock. All in all, with the bands, people, food, entertainment, sponsors and everyone involved, the Vans Warped Tour is an all encompassing lifestyle based day out for fans of music. Whether you’re an old schooler like me or a a teenager who is attending for the first time, the Warped Tour is an amazing experience and staple of many people’s summers.

While the punk rock is happening in the parking lot at the Nassau Coliseum tour stop, just past the arena, right in the middle of the bus parking lot, there are two guys, named Kev and Rev, who along with help from a lot of others, are preparing a massive BBQ.

For me, the party prep starts the day before. At 7:30 AM, I walked over to Esposito and Sons factory in Hell’s Kitchen, where the NYC kings of sausage still have a plant where they make fresh sausage every day. The sausage is like none other and this year they armed me with their brand new fresh Pork Chorizo, Bratwurst & Chicken Andoille with Cheddar Cheese sausages. I watched them make the sausages, put them directly into a box and hand 30 pounds of them over to me! These tasty treats could not be fresher! If you live in NYC you can pick them up at the butcher shop in front but if not, you can order them yourself from Amazon.com.



Later that day, a delivery in the form of AWESOME arrived at my bar, Idle Hands, from Burger Maker. These guys source some of the most amazing Beef available and turn them into utterly delectable Burger patties that taste like fine Steaks! A few places around Manhattan like 4Food & Brother Jimmy’s use their patties but if you want some for yourself, you can get them through Fresh Direct. Jamie from Burger Maker promised me some special patties and I had no idea he was sending over gargantuan 1/2 pound Steak Cut patties. In fact, we had so much Meat that when we arrived at the Warped Tour, we had to use a golf cart to get it from the car!

While the punks are rocking in the lot, the meat is being cooked in the back. Kevin took racks and racks and racks of Ribs along with Chicken and rubbed them with spices before putting them into the grill to smoke all day long.

Once the meat was in the smoker and gathering up lots of flavor, I took a spin over to the AEG Worldwide hospitality area to catch up with some friends. Every year they set up a tasty area of food, cold beverages and entertainment for their guests. Every year, like clockwork, there’s always a tasty backstage Burger awaiting me, serving to satiate my hunger until the big BBQ starts.

As the tour was shortly due to wind up, the intensity in tent city begins as final prep of the meat starts. Kevin and I, along with the help of a couple of friends, pulled all the Chicken and Ribs out of the grill. Kevin had a great idea on how to zing up the meat. We took simple Apple Juice and poured it over the meat in trays before adding a slathering of Sweet Baby Ray’s BBQ sauce. We then covered the trays with tin foil and put them back into the grill. By doing so, the Apple Juice would boil underneath the meat acting as a flavor agent and a tenderizer. The sweet and smoky BBQ sauce would then permeate the Meats adding extra flavor. Goodonya buddy, that was some grillin’ genius!

The next step was to prepare the sweet New Jersey Corn. With some highly appreciated backstage assistance from Lagunitas Brewing Company, we shucked and cracked a massive amount of Corn on the Cob. Once the Corn was cleaned and readied in the trays, I got an amazing idea. Corn can be cooked a number of ways, one of which is to boil the corn which allows a lot of the natural flavors to come out without adding extra flavor. As we were in a parking lot, we didn’t really have easy access to a water source so I came with the next best idea…no, an even better idea…we were going to boil the Corn, on the grill, with Lagunitas’ flagship IPA!

As the final bands are taking stage, party prep goes into high gear. The grill help arrives and the Meat goes into final prep. Props to Nick and Tatiana from TAT for taking on a bulk of the work. The beer arrives, the booths and tables are set up, the DJ booth goes up, bands start to set up in between the buses and the lines for food start to form.


That’s when I bust out the Burger Maker patties and the 30 pounds of Esposito and Sons sausage. The moment the sun drops behind the buses, the party kicks into high gear as about 150 pounds of Meat along with Salads and Corn starts to fill up people’s plates.

Once people made it through the food line they were treated to sets from Brothers Of Brazil, MC Lars, Weerd Science, a DJ set from Travie McCoy, Tricks from Metal Magician Vinnie Magic, a Beer Pong tournament, a bar run by Less Than Jake and all other sorts of party fun that goes on into the AM hours.

Of course the best part of all of this is not the amazing food, the cold beer or the big party, it’s getting together with old friends to enjoy their company on one of the most special events of the summer. There’s nothing like the Warped Tour and for that Kevin Lyman, we thank you.

Thanks to Kevin, Sarah, Kate, Julie and the rest of the Warped Tour crew for always making my birthday a party for everyone to enjoy. Thanks to Rachel and George for the ride and moreover, stopping at Arby’s on the way home because that’s exactly what we needed after a ton of great BBQ, fast food. Thanks for Mark and Trevor for copious amounts of delicious craft beer all the way from Cali. A massive MEATY thanks for David from Esposito and Sons as well as Jamie and John from Burger Maker for the gift of MEAT. Jon agreed to meet me at HB, the redemption location for the passport, to share a Burger and a Beer. Jon being craft beer royalty in NYC and now a major player in the Burger chain, you could probably guess, I was pretty excited. I grabbed my friend and co-worker Alisha and we headed into Times Square to crush Burgs with a legend and a damn friendly one at that.

THE BURGER
I’ve had several of the HB Burgers, most recently at the “Bro’s Burger Brunch” during National Hamburger Month and it was fantastic! As I mulled over the choices on the HB Burger menu, Jon asked if I had tried their Bison Burger as that’s what he was going to get. If it’s good enough for the big man, it’s good enough for this guy!

I ordered my Bison Burger cooked medium rare, on a Whole Wheat Bun with Onion Marmalade and Smoked Mozzarella. Jon threw in an order of Tempura Veggies and Tater Tots. As it was National IPA Day, I used my passport to order a glass of the Heartland Black IPA. The tasty but mild roasted Malty & Chocolate flavors in the beer mask the bitterness hops would normally add to an IPA in this incredibly well balanced and wonderful beer. As for the Burger? FANTASTIC! The Bison meat is well seasoned, cooked perfectly and has a taste that is incredibly savory and yet slightly still sweet. The onions add to the sweet undertones while the Smoked Mozz brings out the salty flavors in the meat. The balance between the two are just amazing. You won’t find another Bison Burger like this in NYC. In fact, this was the BEST bison burger I’ve ever had!

Best be getting that Pat LaFrieda Burger Passport from Thrillist Rewards before it’s no longer available! There’s 3 Burgers on this list I haven’t had. Want to join me?

Summer’s here and love is in the air! When my friends Paul and Mary asked me to perform the services at their wedding I of course said “YES!” (Yes, “Rev” is short for “Reverend” and YES, I really am ordained.) I won’t do it for just anyone but Paul and Mary are truly in love with each other and I was honored to help such a great couple join in matrimony.

What this meant for me though was my first road trip of the summer and with all road trips, there always comes Burgers! Nothing like the open road to get my Conquest itches in gear. As I was headed up to Springfield, MA for their wedding I remembered many a person, including Paul’s band mate, Matt from Shadows Fall swooning over a Burger in their home town. After many years of Matt, as well as many others, telling me “Rev, you have eat at the White Hut,” I was finally getting my chance. The morning after the event, I woke up and stopped by before heading back to NYC.

In the late 1930s Hy Roberts opened a small hot dog stand called “White Hut” in West Springfield, MA. In 1939 he sold it to a former co-worker, Edward J. Barkett for $300. Edward expanded the menu and eventually moved into a store front where the restaurant still stands today. Edward wanted to focus on a fast counter style of business and installed a mere 12 stools right opposite of the grill itself. Edward owned and operated the business until 1985. The place was run by his family and in the latter part of the 60s, his son Edward H. took over running the White Hut. Today, it’s E.J. who now owns and operates it, making it a 3rd generation family business.

The White Hut concept is simple much like the menu, Hamburgers, Hot Dogs & Fries only, unless you get there before 10:30 am where they offer egg sandwiches and omelets. Other than the French Fries, it’s all cooked on a flat top griddle just the other side of the counter. All Burgers are made to order with only two choices of add-ons: Cheese and Fried Onions, both of which are a must. The other part of the White Hut equation is service with a smile. The place is filled, at all hours, with folks of all ages and walks of life. You’ll see families, construction workers, guys in dress shirts and even a Burger Journo! Everyone is treated like a neighbor and friendly chatter is abound at the White Hut’s counter. There’s no printed menus available, so know what you want before you sit down to keep the flow of hungry eaters moving!

THE BURGER
I purposely waited until after breakfast ended at 10:30 am because I had to have one of these legendary, historical Burgers before I left town. With hunger in my belly, coffee in my veins and a slight hangover that usually comes from hanging out with Shadows Fall, I pulled into the parking lot and assumed a spot, dead-center at the White Hut’s counter. I ordered 3 Hamburgers with Cheese and Fried Onions, French Fries and and ice-cold Diet Coke.

I watched 3 patties for fresh ground Beef hit the flat top griddle and in a few minutes they were sitting between buns with a healthy dollop of Fried Onions and Melted Cheese on a plate right in front of me. Looking at them, the melted Cheese was oozing out of the sides. They looked and smelled amazing which is probably what drove me to order an unnecessary 3rd Burger, but hey, how often am I in West Springfield, MA!??! One bite and I was in love. The sweetness of the Fried Onions meshed together with the gooey cheese, the great use of Black Pepper and the thin salty Beef Patty was a perfect mix of how a Hamburger is supposed to taste. The Buns, toasted in a press, are Crunchy on the outside and soft in the center. I hardly made a dent into the boat of freshly cut, crispy, golden and delicious French Fries.

The White Hut does the fast-food Hamburger the way it was intended; fresh, high-quality ingredients & served with a smile.

That Rev’s Burger – Birthday Burger Bash With That Burger Tent at Idle Hands

2011 marks the first birthday in the history of my life where I owned a bar which meant I had to go big. By big, I mean small and by small I mean mini as in mini Burger. What about it makes it big, THEY WERE FREE!!

That’s right! Every Monday at Idle Hands & Billy Hurricanes we give a FREE mini Burgers from That Burger Tent. Dan from That Burger Tent comes down to the bar to make smaller versions of the very popular Burgers he serves on Saturday’s & Sunday’s from his tent in Brooklyn. Dan has his own proprietary Pat LaFrieda blend of ground Beef that he uses in his Burgers and serves them with fresh ingredients on soft and tasty Potato Rolls.

For this party in particular, Dan let me design my very own Burger for the menu and serve ’em up for one night only while our good buddy Caroline held down the fort as our weekly guest bartender.

  • Grilled Pancetta
  • Crunchy Peanut Butter
  • Order it “Extra Blessing” style where the Patty is grilled with Hot Sauce

Was it good? HELL YEAH! It was amazing. While it sounds like an odd mix and one you might not find any where else, let me assure you, it was awesome. To be honest, it would be difficult to make any of Dan’s Burgers bad.

Wing-Off 16 – Bonchon Chicken vs. Waterfront Ale House

From the same people that bring you Burger Conquest, we bring you the New York City Wing-Off. A crew of men on a search for the best wing in NYC. In round 2 of the NYC Wing-Off, any Wing goes regardless of sauce, style & size. Service, ambiance, beverage selection, price and other menus have no factor but they sure do count for a good time! Also, NO WOMEN ALLOWED!!

In January of 2007, 2 men had an argument over where to get the best hot wings in New York City. The debate grew intense and while an audience watched, they agreed to battle it out, wing vs. wing, to see who was right. Some rules were established, some friends were invited and some wings were eaten. In the end, everyone had so much fun that we decided to do it again, and again and again. Thus, the NYC Wing-Off was born.

It’s been years in the making with only one goal in mind, find the best medium and hot wings in NYC. Along the way we have had some fantastic wings, we’ve seen amazing wings be defeated by slightly more amazing wings and we were even invited into a kitchen to design our own wing recipe; “Don’t Stop Believin” sauce, we’ve donated to cancer research and now we can say, we have found the best hot wings in New York City.

The bracket challenge to crown a champion for the best medium and hot wings in New York city came to a close on Saturday, September 25, 2010. On that day, Bar Coastal was crowned the winner and awarded the Burger Conquest Hot Golden Cock Trophy. The NYC Wing-Off has been reborn in 2011 but with a new twist. In the past we only judged on medium and hot wings but now, we re-start and ALL flavors are eligible for judging.

BONCHON CHICKEN

Now that the Wing-Off can include any Wing, BonChon Chicken was destined to be our first choice. People have been touting their Wings to us for years. BonChon is a chain originally born in Seoul South Korea. Their extremely crispy, yet not greasy Chicken Wings have become well known in the Wing community as their Chicken dynasty spread to the states. Thankfully for the NYC Wing-Off Crew, they also have $2.99 drafts of beer, all the time.

BonChon only offers two kinds of Wings; Soy Garlic & Spicy. We ordered both of them and they come with their signature Radishes. BonChon’s wings are EXTREMELY crispy with a super crunch. If you are into crunchy Wings, this would be your jam. The Soy Garlic tasted great and the Spicy ones were VERY spicy. They were so spicy in fact, that I had to cleanse my palette before starting in on the Soy Garlic because it’s a heat that lingers.

Everyone really liked the Wings but agreed they could use a little more Meat on the bone.

WATERFRONT ALE HO– USE

The Waterfront Ale House has a long established history here in NYC. They are well known for being one of the longest running and most respected craft beer bars in New York. Their rotating selection of beers has earned them an award as one of the few Good Beer Seal awarded bars. On top of the tasty beers, The Waterfront Ale House has a reputation for great BBQ though their Fuhgeddaboutit BBQ crew lead by owner Sam Barbieri. They’re also known for having great Hot Wings.

While throwing back a number of tasty 4 ounce beers thanks to our Thrillist Rewards Good Beer Seal Passport, we waited patiently for the Wings to arrive. Once they did, there was no holding back on hungry fingers. The Wings at Waterfront Ale House are covered in a Tomato based sauce that is almost more an Italian Red Sauce Gravy like then a standard Hot Wing Sauce. It has a bit of smokiness to it and yet is also a little sweet. It doesn’t have a lot of heat but does have a lot of flavor. It was so good in fact, that we placed an 2nd order, this time with a request for them to be a little crispier. This was key in the preparation of the Wings so be sure you do the same.

While there we decided to try a few more items on their eclectic menu. The Pulled Pork sandwich was great and almost didn’t need the Bun. My eyes lit up like friggin Christma’s trees when I saw the words “Venison Chili” on the menu. You can order it a top a plate of Super Nachos or with Nacho Chips for dipping on the side. One thing you should know about me, while I do pledge allegiance to the Burger, Venison is actually my favorite thing in the world to eat. This Chili was delicious and I’d definitely suggest you sharing some with friends on your next visit.


WING-OFF 16 OFFICIAL WINNER – WATERFRONT ALE HO– USE!
These Wing-Off’s are never easy to judge, especially when the food is always so damn good. Now that we aren’t judging on a standard like style, it makes this even harder to call. For this particular competition, the decision actually turned into debate because both BonChon & Waterfront Ale House have great, Great Wings. However, someone has to be declared a victory and in this case, it was Waterfront Ale House.

I’ve said it before, when it comes to cooking, there is nothing more important than the quality of the ingredients. You could be using the most standard of recipes or something concocted by your favorite celebrity chef, if you’re using poor quality ingredients, you’re food will not be all that it can be. My ego loves to cook, especially for a large group of people and I always try to get the best and freshest ingredients impossible.

If you want to impress, even yourself, you gotta get the good stuff! Living here in NYC, we have option upon option of amazing sources of food to keep you from skimping out on your recipes. For July 4th (the 3rd actually) we had some friends over for a BBQ and I wanted to really impress them with some tasty treats so I headed off around Hell’s Kitchen and Chelsea to gather up an awesome holiday BBQ feast.

The Hell’s Kitchen Sergimmo Salumeria was started by 2 brothers straight from the homeland, whose first is location is in Astoria, Queens. While they offer many things, their prized creation is the fresh mozzarella, which is made in limited quantities, only every couple of hours. You have to time it right to get a ball of it but believe you me, it’s so worth it! When it comes out fresh, the bag will still be warm and all you need to do is get it home & let it settle. Slice the cheese into small pieces, drizzle it with quality extra virgin olive oil and maybe a little cracked pepper. Be sure to serve it along with some the fantastic cured meats available from Sergimmo Saluemeria.

They bake right there on premises and you can watch all the warm and delicious bread being made right in front of your eyes.  My family special orders from them every year for our Thanksgiving bread needs and they never disappoint, especially with their cheese biscuits! Today however, I was there to pick up some of their Potato Onion Dill Bread, made with Potato Flour, Unbleached Flour, Water, Roasted Potatoes, Roasted Onions, Dill Seeds, Black Pepper, Salt, and Yeast. But more on that later…

Dickson’s Farmstand Meats

If you love meat like I do, you need to know about Dickson’s Farmstand Meats. Not only do they serve great ready to eat foods like their famous Meatballs and sandwiches, but thy offer the highest of quality meats for home preparation. All the farms they work with must fit the following criteria (taken from their website):

  • The entire supply chain (farm to slaughterhouse to point-of-sale) must be no more than 400 miles long.
  • Animal based feeds, prophylactic antibiotics or added hormones are not administered at any point of the animal’s life.
  • The animals from which our meat comes must spend their life on the farm – no CAFO (Concentrated Animal Feeding Operations) or feedlots.

If you’re really into meat, spend some time on their site learning about the farms they work with, recipes on how to prepare their meats and keep up with their blog. It’s a meat mavens paradise. I stopped in to get 2 things; Vacio & Skirt St for Carne Asada and the famed Dickson’s 80-20 Burgers. These bad muthas are made of 80% Beef and 20% Bacon ground together and formed into patties. Dickson’s only makes them in limited quantity so I suggest calling ahead if you really want them.

With all my top quality ingredients purchased, it was time to prep, cook and amaze.

THE REV’S “GUACA-HOLY-MOLE

I love everything that’s in Guacamole with the exception of tomatoes, which I LOATHE. This usually prevents me from eating it. I also like it a little spicier than most people so even when I am willing to work around those chopped little red demons, I’m left unsatisfied. I came up with the following recipe to solve those issues.

Ingredients:
4 Avocado’s
5 Garlic Cloves, Minced
1 Jalapeño Chile Pepper, seeded and minced
1 Medium Red Onion, finely chopped
4 Cherry Peppers, seeded and minced
1 large handful Fresh Cilantro, Leaves and Stems, finely chopped
1 Lime, juiced
2 teaspoons freshly ground Cumin Seed
1 teaspoon Cracked Sea Salt
1 teaspoon Cracked Black Pepper

Preparation:
1. Slice the avocados in half, discarding the pit. Scoop the innards into a mixing bowl.
2. Chop the entire Red Onion into small pieces and add 2/3rd of it to the bowl. Set the rest aside in a separate bowl. You will need this for the Carne Asada.
3. Remove the seeds from both the Jalapeno and Cherry Peppers, chop into small pieces and add to the bowl.
4. Chop a large hand full of the Cilantro, (including the stems) into small pieces and add it along with the garlic into the bowl as well.
5. Squeeze the juice from the Lime into the bowl.
6. Sprinkle in the Cumin, Salt & Black Pepper into the bowl.
7. Using a spoon, GENTLY mix everything in the bowl until its thoroughly distributed.

Put about half of this away for use with the Carne Asada while serving the rest with Blue Corn Chips.

“CARNIVORE AWESOMESADA”

For some reason here in Manhattan, there is not an abundance of good traditional Mexican food. If you want the comida mas buena, you either have to really search it out, or do what I do, make it yourself. Using the Meat from Dickson’s and the produce from the Manhattan Fruit Exchange, I made up some wickedly outstanding y autentico Carne Asada.

Ingredients:
Meat:
2 pounds Flank or Skirt Steak

Marinade:
1/2 Cup Extra Virgin Olive Oil
5 Garlic Cloves, Minced
1 Jalapeño Chile Pepper, seeded and minced
2 teaspoons freshly ground Cumin Seed
1 large handful Fresh Cilantro, Leaves and Stems, finely chopped
1 teaspoon Cracked Sea Salt
1 teaspoon Cracked Black Pepper
2 Limes, juiced
2 tablespoons White Vinegar
2 finely chopped Baby Carrots (or 2 teaspoon Sugar)
1/2 cup Lager (Sixpoint The Crisp)
Fresh Corn Tortillas

*Note, all the best recipes have BEER in them.

Preparation:
1. Slice the Meat lengthy wise into strips and lay them in a large bowl or dish.
2. Combine the rest of the ingredients into a bowl, adding in the lager (I definitely suggest using Sixpoint’s The Crisp) last.
3. Once thoroughly mixed and stirred, pour over Meat.
4. Cover and put into fridge to marinate for at least 60 minutes although 2 hours+ is preferred.

5. Once the Meat has been marinated, remove and place on grill over medium to medium-high heat. Keep an eye on it as you don’t want to flip more than once and this meat will cook very, very fast. You want to make sure you only sear the outside, leaving the insides juicy, red & tender.

6. Pull the Beef from the grill and chop into bite sizes pieces.

7. Serve in warm Corn Tortillas with a dollop of The Rev’s Guaca-Holy-Mole and a large pinch of chopped Cilantro and Red Onions.

Remember to say humbling things like “oh, it’s no big deal really,” “I just like to feed you guys stuff I think you’ll like,” & “I only spent like a bajillion dollars on amazing ingredients that took me more than 2 miles to ride to on my bike, in the rain, both ways, just so I could get an ego rise out of watching you say ‘OHMYGOD! This is so amazing Rev! You are an incredible chef.”

Give your guests’ stomachs a little time to recover while they sip tasty craft beers. Put on some good music, tell some jokes and let everyone’s hunger start to build back up and then just when they already think you are the world’s master grill master, bust out the secret weapon..

DICKSON’S FARMSTAND MEATS “80-20” BURGER

Seriously, if you aren’t already on your way to the Chelsea Market to get these, what is wrong with you? Usually when you hear someone refer to a burger as “80/20” it means lean to fat content ratio. 80% lean to 20% fat is universally known as the sweet spot for having a great Burger that isn’t too “bad” for you. But not at Dickson’s! NO! At Dickson’s it means the patty is formed using a blend that is 80% Beef and 20% Bacon. The Beef used is lean as the fat needed to create a juicy and delicious Burger comes from the Bacon. Cooked Medium Rare, served with a single slice of melted White American Cheese on an Amy’s Potato Onion Dill Roll and you will be serving your guests one of the most amazing Burgers they will ever have eaten. At least that’s what my guests said!!

Mikey’s Marinade

In an effort to show off the versatility and quality of Dickson’s Vacio, I decided to give my guests a little treat of something else. I recently met the people behind Mikey’s Marinade who told me the story of a family recipe that was used for years and is not bottled and available to the public. This soy sauce based marinade is made right here in NYC and intended specifically for using with steak. I was dying to try it out and what better test than using Dickson’s? I took one little strip, followed the marinating descriptions on the bottle and grilled it up. It gave the meat a sweet and smoky taste that was savory and tangy. Dickson’s meat certainly didn’t need it but the marinade itself is pretty good.

If that just isn’t going to work out for you, don’t be afraid to venture beyond the local big name grocery chain and search out quality food purveyors in your area…and then use my recipes!
